2 cups cooked chicken, shredded

1 cup long-grain rice (preferably jasmine or basmati)

6 cups chicken broth

1 cup carrots, diced

1 cup celery, diced

1 medium onion, diced

3 garlic cloves, minced

1/4 cup fresh lemon juice

Zest of 1 lemon

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery, stirring occasionally until they soften, about 5-7 minutes.

    Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Pour in the chicken broth and bring the mixture to a gentle boil.

        Stir in the rice and thyme; reduce the heat to low and simmer for about 15 minutes or until the rice is tender.

          Add the shredded chicken, lemon juice, and lemon zest to the pot. Stir well and cook for another 5 minutes to heat through.

            Season with salt and pepper to taste, adjusting as necessary for flavor.
