For the Chicken Filling:

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 ½ cups mozzarella cheese, shredded

1 cup Parmesan cheese, grated

1 egg

2 cups fresh spinach, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

For the Marinara Sauce:

28 oz can crushed tomatoes

2 tablespoons olive oil

1 onion, chopped

4 cloves garlic, minced

1 tablespoon dried basil

1 teaspoon dried oregano

1 teaspoon sugar

Salt and pepper to taste

Other:

9 lasagna noodles

Extra mozzarella for topping

Fresh basil for garnish (optional)

Instructions
 

Prepare Marinara Sauce: In a large saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for another minute. Add crushed tomatoes, dried basil, oregano, sugar, salt, and pepper. Simmer for 20 minutes, allowing flavors to meld.

    Cook Lasagna Noodles: While the sauce simmers, bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      Prepare Chicken Filling: In a mixing bowl, combine shredded chicken, ricotta cheese, 1 cup of mozzarella, Parmesan cheese, egg, chopped spinach, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Assemble the Lasagna: Preheat the oven to 375°F (190°C). Spread a layer of marinara sauce at the bottom of a 9x13-inch baking dish. Place three lasagna noodles over the sauce. Spread half of the chicken filling over the noodles, followed by 1 cup of marinara sauce. Repeat the layering with three more noodles, the remaining chicken filling, and 1 cup of sauce. Top with the last three noodles, the remaining sauce, and sprinkle with extra mozzarella cheese.

          Bake: Cover the dish with aluminum foil (make sure it doesn’t touch the cheese) and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

            Rest and Serve: Allow the lasagna to rest for 10-15 minutes before slicing. Garnish with fresh basil if desired and serve hot.
