1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

4 cups chicken broth

1 pound cooked shredded chicken

1 package (16 oz) potato gnocchi

2 cups fresh spinach

1 cup heavy cream

Salt and pepper to taste

Grated Parmesan cheese, for serving

In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables soften.
