When preparing your Chicken Fajita Pasta, timing is essential, especially when it comes to adding garlic. To maximize its flavor, garlic should ideally be added after the vegetables have begun to soften but before they reach full tenderness. This allows the garlic to infuse the oil and the dish with its aromatic qualities without burning, which can lead to a bitter taste. A good rule of thumb is to add minced garlic to the pan about 30 seconds to 1 minute before you’re ready to combine it with the other ingredients. This ensures that the garlic becomes fragrant and slightly golden without overcooking.

Ingredients

8 oz fettuccine pasta

1 lb boneless, skinless chicken breasts, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium onion, sliced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

½ teaspoon paprika

Salt and pepper to taste

1 cup heavy cream

½ cup shredded cheddar cheese

Fresh cilantro, for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken, season with salt, pepper, chili powder, cumin, smoked paprika, and paprika. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

Cook the Vegetables: In the same skillet, add the sliced onions and bell peppers. Sauté for about 5 minutes or until softened, and then add the minced garlic. Cook for another minute until fragrant.

Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Stir in the heavy cream and mix well to combine. Let it simmer for 2-3 minutes until the mixture slightly thickens.

Add Pasta and Cheese: Add the drained fettuccine to the skillet and toss everything together. Sprinkle in the shredded cheddar cheese and mix until melted and well blended.

Adjust Seasoning: Taste and adjust seasoning with more salt or spices as needed.

Serve: Plate the chicken fajita pasta, garnishing with fresh cilantro on top.
