For the Chow Mein:

8 oz chow mein noodles

1 lb boneless chicken breast, sliced thin

2 tbsp vegetable oil

1 cup shredded carrots

1 cup bell peppers (red and yellow), sliced

1 cup bean sprouts

4 green onions, sliced

2 cloves garlic, minced

1 inch fresh ginger, minced

Salt and pepper to taste

For The Best Chow Mein Sauce:

1/4 cup soy sauce (low sodium)

2 tbsp oyster sauce

1 tbsp hoisin sauce

1 tbsp sesame oil

1 tsp cornstarch

1/4 cup chicken broth or water

1 tsp sugar

Pinch of white pepper (optional)

Instructions
 

Cook the Noodles: Bring a large pot of water to a boil. Add the chow mein noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Toss with a little oil to prevent sticking.

    Prepare the Sauce: In a bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch, chicken broth, sugar, and white pepper. Set aside.

      Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and cook until golden brown and fully cooked through (about 5-7 minutes). Season with salt and pepper. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stir-fry for about 30 seconds until fragrant. Then, add the shredded carrots, bell peppers, and bean sprouts. Stir-fry for another 2-3 minutes until vegetables are tender-crisp.

          Combine Ingredients: Return the chicken to the skillet. Add the cooked chow mein noodles and pour the prepared sauce over everything. Toss gently but well to combine, ensuring the noodles and chicken are coated in the sauce. Stir-fry for another 2-3 minutes until heated through.

            Garnish and Serve: Sprinkle sliced green onions on top for garnish. Serve hot and enjoy your homemade Chicken Chow Mein!
