1.5 lbs chicken thighs, boneless and skinless

2 tbsp olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

2 jalapeños, finely chopped (adjust for heat preference)

1 tsp smoked paprika

1 tsp ground cumin

1 tsp dried oregano

½ tsp cayenne pepper

Salt and pepper, to taste

1 can (14 oz) diced tomatoes with green chilies

1 cup chicken broth

1 cup corn kernels (fresh or frozen)

1 cup cooked black beans, drained and rinsed

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken: Cut the chicken thighs into bite-sized pieces. Season them with salt, pepper, smoked paprika, cumin, and oregano. Set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent (about 3-4 minutes).

      Add Peppers and Chicken: Stir in the red and green bell peppers along with the jalapeños, cooking for another 3 minutes. Then add the seasoned chicken pieces to the skillet, cooking until browned on all sides (about 5-7 minutes).

        Combine the Mixture: Pour in the can of diced tomatoes (with juices) and chicken broth. Stir well to combine all ingredients, then bring to a simmer.

          Thicken the Sauce: Add the corn kernels and black beans to the skillet. Allow the mixture to simmer on low for 15-20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.

            Serve: Adjust seasoning with additional salt and pepper as needed. Serve your Chicken Chipulos hot, garnished with fresh cilantro and lime wedges on the side.
