Ingredients

1 lb chicken breast, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1 cup cooked brown rice

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 avocado, diced

1 cup cherry tomatoes, halved

½ cup red onion, diced

¼ cup fresh cilantro, chopped

Juice of 1 lime

1 cup shredded cheddar cheese (optional)

Sour cream or Greek yogurt (optional)

Instructions

Season the Chicken: In a bowl, combine diced chicken with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Mix well to ensure the chicken is evenly coated with the spices.

Cook the Chicken: Heat a skillet over medium heat. Add seasoned chicken and cook for about 6-8 minutes, or until the chicken is fully cooked and browned on the outside. Stir occasionally for even cooking. Set aside.

Prepare the Base: In a large bowl, layer the cooked brown rice as the base of your burrito bowl.

Add the Proteins: Top the rice with the cooked chicken, black beans, and corn.

Fresh Toppings: Next, add diced avocado, halved cherry tomatoes, diced red onion, and fresh cilantro on top of the chicken and beans mixture.

Final Touches: Squeeze fresh lime juice over the entire bowl and sprinkle with cheese if using.

Serve: If desired, add a dollop of sour cream or Greek yogurt on top for extra creaminess. Serve immediately and enjoy your flavorful fiesta!
