2 cups cooked chicken, shredded

4 cups diced fresh tomatoes

1 cup mozzarella cheese, shredded

1/2 cup fresh basil, chopped

2 cloves garlic, minced

1/2 cup balsamic vinegar

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon olive oil

1 French baguette (or crusty bread), sliced

4 tablespoons pesto (optional)

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare Chicken Mixture: In a large bowl, combine shredded chicken, diced tomatoes, minced garlic, balsamic vinegar, olive oil, salt, pepper, and half of the chopped basil. Mix well to combine all the flavors.

      Layer Ingredients: In a greased 9x13 inch casserole dish, layer half of the baguette slices on the bottom. Pour half of the chicken mixture over the bread, then sprinkle half of the mozzarella cheese on top.

        Repeat Layers: Arrange the remaining baguette slices over the cheese, followed by the rest of the chicken mixture, and finish with the remaining mozzarella cheese.

          Add Pesto (Optional): If using, drizzle pesto over the top for added flavor.

            Bake: Cover the casserole dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish: Once out of the oven, let it cool for a few minutes. Garnish with the remaining fresh basil before slicing and serving.
