Chicken Avocado Melt Sandwich

Ingredients
  

2 cups cooked chicken, shredded

1 ripe avocado, mashed

1/2 cup Greek yogurt

1 tablespoon lime juice

1/4 teaspoon garlic powder

Salt and pepper to taste

4 slices of whole-grain bread

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

Fresh cilantro or parsley for garnish (optional)

Butter or olive oil for toasting

Instructions
 

In a mixing bowl, combine the shredded chicken, mashed avocado, Greek yogurt, lime juice, garlic powder, salt, and pepper. Mix thoroughly until well combined and creamy.

    Preheat a skillet or griddle over medium heat and add a little butter or olive oil.

      Assemble the sandwiches: On two slices of bread, spread a generous amount of the chicken and avocado mixture. Top with halved cherry tomatoes and a sprinkle of mozzarella cheese.

        Place the other two slices of bread on top to form the sandwiches.

          Carefully place the assembled sandwiches in the preheated skillet. Cook for about 3-4 minutes on one side until golden brown and crispy.

            Flip the sandwiches and cook for another 3-4 minutes until the other side is golden brown and the cheese has melted.

              Remove the sandwiches from the skillet and let them cool for a minute. Slice them in half diagonally for serving.

                Garnish with fresh cilantro or parsley if desired.
