2 cups cooked chicken, shredded

1 cup jasmine rice

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

4 garlic cloves, minced

8 cups chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, cooking until the vegetables are softened, about 5-7 minutes.

    Stir in the minced garlic, dried thyme, and dried rosemary, cooking for an additional minute until fragrant.

      Pour in the chicken broth and bring it to a gentle boil.

        Add the jasmine rice and shredded chicken to the pot. Reduce heat to a simmer, cover, and let cook for about 18-20 minutes or until the rice is tender.

          Once cooked, stir in the lemon juice and season with salt and pepper to taste.
