2 cups cooked chicken, shredded

1 cup frozen mixed vegetables (carrots, peas, and corn)

1 cup chicken broth

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 can (10.5 oz) creamy mushroom soup

1 cup all-purpose flour

2 tablespoons baking powder

1/2 teaspoon salt

3 tablespoons butter, melted

1 cup shredded cheddar cheese (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

    In a large mixing bowl, combine the shredded chicken, frozen mixed vegetables, chicken broth, milk, garlic powder, onion powder, thyme, and salt and pepper. Mix well and pour into the prepared baking dish.

      In another bowl, whisk together the flour, baking powder, and salt. Stir in the melted butter until just combined. The batter may be thick.

        Drop spoonfuls of the dumpling batter over the chicken mixture in the casserole, making sure to leave some space between them for rising.

          Pour the creamy mushroom soup evenly over the dumplings, which will keep them moist while baking.

            If using, sprinkle the shredded cheddar cheese over the top of the casserole.

              Bake in the preheated oven for 30-35 minutes, or until the dumplings are cooked through and golden brown on top.

                Remove from the oven and let it cool for about 5 minutes before serving.
