Ingredients

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup cherry pie filling

10 egg roll wrappers

1/4 cup all-purpose flour (for sealing)

1 egg, beaten (for egg wash)

Cooking oil (for frying)

Whipped cream (for serving, optional)

Fresh cherries (for garnish, optional)

Instructions

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Whip until smooth and creamy.

Lay one egg roll wrapper on a clean, dry surface, with one corner facing you.

Spoon about 2 tablespoons of the cream cheese mixture onto the center of the wrapper.

Add 1 tablespoon of cherry pie filling over the cream cheese mixture.

Moisten the edges of the wrapper with a little water (this helps to seal the egg roll).

Fold the bottom corner over the filling, then fold in the sides, and finally roll it up tightly to seal. Repeat with remaining wrappers and filling.

In a large skillet or frying pan, heat about 1 inch of cooking oil over medium heat.

Carefully add the egg rolls to the hot oil, frying for 2-3 minutes on each side or until golden brown and crispy.

Remove egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.

Serve warm, optionally garnished with a dollop of whipped cream and fresh cherries on top.
