Ingredients
  

For the crust:

1 cup all-purpose flour

1/2 cup unsalted butter, softened

1/3 cup granulated sugar

1/4 teaspoon salt

1 egg yolk

For the cherry filling:

2 cups fresh or frozen cherries, pitted and halved

1/2 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

For the crumb topping:

1/2 cup all-purpose flour

1/2 cup rolled oats

1/3 cup brown sugar, packed

1/4 cup unsalted butter, melted

1/2 teaspoon cinnamon

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Make the Crust: In a medium bowl, combine 1 cup of flour, softened butter, sugar, salt, and egg yolk. Mix until a dough forms. Press this mixture evenly into the bottom of a greased 9x9 inch baking pan.

      Bake the Crust: Bake the crust in the preheated oven for about 15 minutes, or until lightly golden. Remove and set aside to cool slightly.

        Prepare the Cherry Filling: In another bowl, combine the pitted and halved cherries, sugar, cornstarch, lemon juice, and vanilla extract. Mix gently until the cherries are evenly coated.

          Assemble the Bars: Pour the cherry filling over the baked crust, spreading it evenly.

            Make the Crumb Topping: In a separate bowl, mix together 1/2 cup flour, oats, brown sugar, melted butter, and cinnamon until crumbly. Sprinkle this mixture over the cherry filling evenly.

              Bake Again: Return the pan to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the cherry filling is bubbly.

                Cool and Slice: Allow the cherry bars to cool completely in the pan on a wire rack. Once cooled, cut into squares.
