Ingredients
  

2 cups unsweetened applesauce

1 cup cherry-flavored gelatin (Jell-O)

1 cup boiling water

1 cup cold water

1/2 teaspoon almond extract

1/2 cup chopped walnuts (optional)

1 cup maraschino cherries, drained and halved

1 cup whipped cream (for garnish)

Fresh mint leaves (for garnish)

Instructions
 

In a mixing bowl, dissolve the cherry-flavored gelatin in 1 cup of boiling water, stirring constantly until completely dissolved.

    Add 1 cup of cold water to the gelatin mixture. Mix well.

      Stir in the unsweetened applesauce and almond extract until fully combined.

        Fold in the chopped walnuts and halved maraschino cherries gently to evenly distribute them throughout the mixture.

          Pour the mixture into a mold (a decorative jello mold works beautifully) or a serving dish of your choice.

            Cover with plastic wrap and refrigerate for at least 4 hours or until set.

              Once set, carefully unmold the jello salad onto a serving platter or serve directly from the dish.

                Garnish with whipped cream and fresh mint leaves before serving.
