2 cups cooked shredded chicken

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon chili powder

8 flour tortillas (10-inch)

1 can (10 oz) diced green chilies

1/4 cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cream cheese, half of the sour cream (1/2 cup), half of the Monterey Jack cheese (1/2 cup), garlic powder, onion powder, cumin, chili powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.

      Prepare the Tortillas: Take a tortilla and place a generous amount of the chicken mixture in the center. Add a few diced green chilies on top. Roll the tortilla tightly, folding in the sides as you go, to secure the filling. Repeat this process for all tortillas.

        Make the Sauce: In a separate bowl, combine the remaining sour cream (1/2 cup), chicken broth, and the remaining Monterey Jack cheese (1/2 cup) along with the cheddar cheese. Mix well until smooth.

          Assemble the Dish: Spread a thin layer of the sauce on the bottom of a greased 9x13 inch baking dish. Place the rolled tortillas seam side down in the dish. Pour the remaining cheese sauce evenly over the top of the enchiladas.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

              Garnish and Serve: Once out of the oven, let it cool for a few minutes before serving. Top with fresh chopped cilantro and serve warm.
