Ingredients

1 lb walleye fillets, skinless and boneless

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 cup shredded cheddar cheese

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Oil for frying (such as vegetable or canola oil)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Walleye: Cut the walleye fillets into bite-sized nugget pieces. Pat them dry with paper towels and season with salt, pepper, garlic powder, onion powder, and smoked paprika. Let them sit for about 10 minutes to absorb the flavors.

Set Up Breading Station: In one shallow bowl, place the flour. In a second shallow bowl, whisk the eggs until smooth. In a third shallow bowl, combine the panko breadcrumbs and shredded cheddar cheese.

Bread the Fish: Dip each walleye nugget first into the flour, shaking off the excess. Next, dip it into the beaten eggs, then coat it thoroughly in the panko-cheese mixture. Make sure each nugget is nicely coated for maximum crunch.

Heat Oil: In a large frying pan, heat about 1 inch of oil over medium-high heat. To test if the oil is ready, drop a small piece of bread in; if it sizzles and bubbles, the oil is hot enough.

Fry Nuggets: Carefully add the nuggets to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the nuggets and let them drain on a plate lined with paper towels.

Serve: Arrange the cheesy walleye nuggets on a serving platter and sprinkle with fresh parsley for color. Serve hot with your favorite dipping sauce, such as tartar sauce or a spicy aioli.
