In a large mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, grated parmesan, eggs, garlic powder, onion powder, nutmeg, salt, and pepper. Mix until well combined.
In a separate bowl, take the chopped spinach and squeeze out excess moisture. Then, fold the spinach into the cheese mixture until evenly distributed.
Grease a baking dish with a little olive oil or cooking spray. Pour the spinach and cheese mixture into the dish and spread it evenly.
In another bowl, mix the breadcrumbs with melted butter until evenly coated. Sprinkle the breadcrumb mixture over the spinach bake.
Top with the remaining mozzarella cheese for an extra cheesy goodness.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
Let it cool for a few minutes before slicing and serving.
