4 large russet potatoes, peeled and thinly sliced

2 cups cooked ham, diced

1 medium onion, finely chopped

3 cups shredded sharp cheddar cheese

2 cups heavy cream

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon garlic powder

1 teaspoon thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter.

    In a saucepan over medium heat, melt the butter. Stir in the chopped onion and sauté until translucent, about 3-4 minutes.

      Sprinkle the flour over the cooked onion, stirring constantly for another 2 minutes to form a roux.

        Gradually pour in the heavy cream, whisking continuously to avoid lumps. Add garlic powder, thyme, salt, and pepper to taste. Cook this mixture until it starts to thicken, approximately 5 minutes.

          Layer half of the sliced potatoes at the bottom of the greased baking dish. Follow with half of the diced ham and half of the cheese.

            Pour half of the cream mixture over this layer, then repeat with the remaining potatoes, ham, cheese, and pour the rest of the cream mixture on top.

              Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

                Remove the foil and bake for an additional 20-25 minutes or until the potatoes are tender and the cheese on top is bubbly and golden brown.

                  Allow the dish to cool for 10 minutes before serving. Garnish with chopped parsley for a pop of color.
