Ingredients
  

2 cups cooked rice (white or brown)

2 cups cooked shredded chicken (rotisserie or poached)

1 cup salsa (your favorite brand or homemade)

1 cup corn (canned, frozen, or fresh)

1 cup black beans (canned, drained, and rinsed)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Rice: If you haven’t already done so, cook the rice according to package instructions and set it aside to cool slightly.

      Combine Base Ingredients: In a large mixing bowl, combine the cooked rice, shredded chicken, salsa, corn, black beans, garlic powder, cumin, smoked paprika, and half of both cheeses (mozzarella and cheddar). Mix well until all ingredients are evenly combined. Season with salt and pepper to taste.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

          Top with Cheese: Sprinkle the remaining mozzarella and cheddar cheeses evenly over the top of the chicken and rice mixture.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Once the bake is done, remove it from the oven and let it cool for a few minutes. Garnish with fresh cilantro or parsley, if desired. Serve warm and enjoy!
