1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (10 oz) Rotel diced tomatoes with green chilies

2 cups uncooked pasta (elbow macaroni or rotini work well)

2 cups beef broth (or water)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tsp chili powder

1/2 tsp cumin

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Cook the Ground Beef: In a large skillet or pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

    Sauté Aromatics: Add the diced onion and minced garlic to the skillet with the beef. Sauté for about 3-4 minutes until the onion becomes translucent and the garlic is fragrant.

      Add Rotel Tomatoes: Stir in the can of Rotel tomatoes (with juices) and mix well. Allow it to simmer for about 2 minutes.

        Mix in Pasta and Broth: Add the uncooked pasta to the mixture and pour in the beef broth. Stir to combine, then bring it to a boil.

          Season the Dish: Add chili powder, cumin, salt, and pepper. Reduce the heat to low, cover the pot, and simmer for about 12-15 minutes, or until the pasta is al dente, stirring occasionally.

            Cheesy Finish: Once the pasta is cooked, remove from heat and stir in the shredded cheddar and Monterey Jack cheeses until fully melted and creamy.
