3 cups mixed root vegetables (e.g., potatoes, carrots, parsnips, sweet potatoes), peeled and thinly sliced

1 medium onion, thinly sliced

2 cups heavy cream

1 cup grated sharp cheddar cheese

1 cup grated Gruyère cheese

2 cloves garlic, minced

2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup breadcrumbs (for topping)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large sauté pan, heat the olive oil over medium heat. Add the sliced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      In a mixing bowl, combine the heavy cream, fresh thyme, salt, and pepper. Mix well until the seasonings are evenly distributed.

        In a greased 9x13 inch baking dish, arrange a layer of root vegetable slices at the bottom, followed by a portion of the sautéed onion and garlic mixture. Sprinkle with some cheddar and Gruyère cheese.

          Repeat the layering process until all the vegetables, onions, and cheeses are used, finishing with cheese on top.

            Pour the creamy mixture evenly over the top of the layered vegetables.

              In a small bowl, mix the breadcrumbs with a drizzle of olive oil and a pinch of salt. Sprinkle the breadcrumb mixture over the cheese layer for added crunch.

                Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.

                  Once cooked, remove from the oven and let it sit for 5-10 minutes before serving.
