2 pounds baby Yukon Gold potatoes, halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

Fresh chives, finely chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the halved potatoes with olive oil, garlic powder, paprika, oregano, salt, and pepper. Toss until the potatoes are evenly coated.

      Arrange the potatoes cut-side down in a single layer on a large baking sheet lined with parchment paper.

        Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender.

          Remove the baking sheet from the oven and sprinkle the shredded cheddar and grated Parmesan evenly over the potatoes.

            Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

              Once done, remove from the oven and let cool slightly, then garnish with fresh chives.
