Ingredients

1 pound baby potatoes, halved

1 pound smoked sausage, sliced

1 cup shredded sharp cheddar cheese

1/2 cup ranch dressing

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chopped parsley for garnish

Instructions

Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the halved baby potatoes and sliced smoked sausage.

Drizzle the olive oil over the potatoes and sausage. Add garlic powder, onion powder, smoked paprika, salt, and pepper. Toss everything together until well coated.

Lay the sausage and potato mixture on a large baking sheet lined with parchment paper in a single layer.

Roast in the preheated oven for about 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through.

Once the potatoes and sausage are cooked, take them out of the oven and drizzle the ranch dressing evenly over the hot mixture. Stir well to combine.

Sprinkle the shredded cheddar cheese over the top of the potato and sausage mixture. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Remove from the oven, garnish with fresh chopped parsley, and serve hot.
