2 medium potatoes, peeled and diced

4 large eggs

1 cup shredded cheddar cheese (or your favorite cheese)

1/2 cup onion, finely chopped

1/2 cup bell pepper, diced (any color)

2 cloves garlic, minced

2 tablespoons olive oil

Prep the Potatoes: Bring a pot of salted water to a boil. Add the diced potatoes and cook for about 8-10 minutes or until fork-tender. Drain and set aside.

    Sauté the Veggies: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onions and bell peppers. Sauté for about 3-4 minutes until they start to soften.

      Add Garlic and Potatoes: Stir in the minced garlic, followed by the boiled potatoes. Cook for another 5 minutes, allowing the potatoes to crisp up slightly, stirring occasionally.
