3 cups all-purpose flour

1 ½ teaspoons salt

1 teaspoon sugar

1 packet (2 ¼ teaspoons) active dry yeast

1 cup lukewarm water (about 110°F)

1 tablespoon olive oil, plus more for drizzling

2 medium-sized onions, thinly sliced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Coarse sea salt for sprinkling

Instructions
 

In a small bowl, combine the lukewarm water, sugar, and yeast. Let sit for about 5-10 minutes until frothy.

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.

      Stir with a wooden spoon until the dough starts to come together. Then turn it out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

        Place the dough in a greased bowl, cover it with a damp towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

          While the dough is rising, heat a tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they become caramelized and golden brown, about 15-20 minutes.

            Once the dough has risen, preheat your oven to 425°F (220°C).

              Punch down the risen dough and transfer it to a parchment-lined baking sheet. Press it into a rectangle or circle, about ½ inch thick.

                Use your fingers to make dimples all over the surface of the dough. Drizzle with olive oil, sprinkle with coarse sea salt, and top with the caramelized onions, mozzarella, Parmesan, and rosemary.

                  Allow the focaccia to rise again for about 20 minutes.

                    Bake in the preheated oven for 20-25 minutes until golden brown and the cheese is bubbly.

                      Remove from the oven and let cool for a few minutes before slicing into squares or wedges.
