Ingredients
  

1 lb ground beef

1 lb ground pork (or ground turkey)

1 cup breadcrumbs (preferably seasoned)

1 large onion, finely chopped

2 cloves garlic, minced

1 teaspoon Worcestershire sauce

2 large eggs

1 cup shredded cheddar cheese, plus extra for topping

1 cup milk

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup diced bell peppers (any color)

1 cup frozen mixed vegetables (peas, corn, carrots)

1 large zucchini, sliced

1 cup diced tomatoes (canned or fresh)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Vegetables: In a large skillet over medium heat, sauté the chopped onion, minced garlic, and bell peppers for about 5-7 minutes, until softened. Add the diced zucchini and cook for an additional 2 minutes. Remove from heat.

      Mix the Meatloaf Base: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Worcestershire sauce, eggs, shredded cheddar cheese, milk, Italian seasoning, salt, and pepper. Mix until all ingredients are thoroughly incorporated.

        Add Vegetables: Fold in the sautéed vegetables and frozen mixed vegetables into the meat mixture until well combined.

          Assemble the Casserole: In a greased 9x13 inch baking dish, spread half of the meat mixture evenly. Layer the diced tomatoes over the meat. Then spread the remaining meat mixture on top.

            Add Toppings: Sprinkle the casserole with extra shredded cheddar cheese on top.

              Bake: Place the casserole in the preheated oven and bake for about 45-50 minutes or until the internal temperature reaches 160°F (71°C) and the cheese is bubbly and golden brown.

                Rest and Serve: Once out of the oven, let the casserole rest for about 10 minutes. Garnish with fresh parsley if desired. Serve warm and enjoy!
