9 lasagna noodles

2 cups cooked chicken, shredded

1 cup frozen spinach, thawed and drained

1 cup canned artichoke hearts, chopped

2 cups ricotta cheese

1 cup mozzarella cheese, shredded

1 cup Parmesan cheese, grated

1 egg

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and black pepper to taste

2 cups marinara sauce

Instructions
 

Preheat the oven to 375°F (190°C).

    Boil the lasagna noodles according to package instructions until al dente, then drain and lay them flat on a clean kitchen towel to prevent sticking.

      In a mixing bowl, combine the ricotta cheese, egg, garlic, dried herbs, salt, and pepper. Stir until well mixed.

        In a separate bowl, combine the shredded chicken, spinach, artichoke hearts, and half of the mozzarella cheese. Mix thoroughly.

          Spread a thin layer of marinara sauce in the bottom of a 9x13 inch baking dish, covering the base evenly.

            Layer the lasagna noodles: Place three noodles over the sauce, then spread half of the ricotta mixture over the noodles.

              Next, add half of the chicken-vegetable mixture followed by a layer of marinara sauce. Repeat this layering process with noodles, ricotta mixture, chicken mixture, and sauce, ending with a final layer of lasagna noodles.

                Top the final layer with the remaining marinara sauce and sprinkle the remaining mozzarella and all the Parmesan cheese evenly on top.

                  Cover the dish with aluminum foil (do not let it touch the cheese) and bake for 25 minutes.

                    Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                      Let the lasagna rest for 10 minutes before slicing to allow the layers to set.
