4 cups fresh broccoli florets

1 cup cooked quinoa (or rice for a different texture)

1 cup sharp cheddar cheese, grated

1 cup cream of mushroom soup (can use homemade or store-bought)

1/2 cup milk (dairy or non-dairy)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

1/4 teaspoon salt

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (for greasing)

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with olive oil.

    In a large pot, bring salted water to a boil. Add the broccoli florets and blanch for about 2-3 minutes, until bright green but still crisp. Drain and rinse under cold water to stop the cooking process. Set aside.

      In a large mixing bowl, combine the cooked quinoa, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Stir until well combined.

        Add the blanched broccoli and half of the cheddar cheese into the mixture. Fold gently to combine, ensuring the broccoli pieces stay intact.

          Pour the broccoli and cheese mixture into the prepared baking dish, spreading it evenly. Top with the remaining cheddar cheese.

            If using, sprinkle breadcrumbs evenly over the top for a crunchy finish.

              Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and the top is lightly golden.

                Once out of the oven, let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
