1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

4 medium potatoes, thinly sliced

2 cups shredded cheddar cheese

1 cup sour cream

1 cup beef broth

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened, about 3-4 minutes.

      Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, around 6-8 minutes. Drain any excess fat.

        Season the beef mixture with dried thyme, paprika, salt, and pepper. Mix well and remove from heat.

          In a large baking dish, layer half of the sliced potatoes to cover the bottom.

            Spread the beef mixture evenly over the potatoes, then dollop half of the sour cream on top.

              Sprinkle one cup of shredded cheddar cheese over the beef layer.

                Add the remaining potato slices on top of the cheese layer. Pour the beef broth evenly over the entire casserole.

                  Finish by dolloping the remaining sour cream on top and sprinkling the last cup of cheddar cheese for that irresistible cheesy crust.

                    Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

                      After 45 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden brown. Let it cool for 5-10 minutes before serving.
