2 large yellow onions

1 cup shredded sharp cheddar cheese

1 cup cooked and crumbled bacon (about 6-8 slices)

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup buttermilk

1 cup breadcrumbs (preferably panko for extra crunch)

Prepare the Onions: Peel the onions and slice them into ¾ inch thick rings. Carefully separate the rings and set aside.

    Fill the Rings: In a bowl, combine the shredded cheddar cheese and crumbled bacon. Take 2-3 smaller onion rings and fill them with the cheese and bacon mixture, then sandwich them with a larger onion ring. This will create a cheese and bacon-stuffed onion ring. Repeat until all rings are filled.

      Prepare the Breading Station: In a shallow bowl, mix the flour, garlic powder, smoked paprika, salt, and black pepper. In another bowl, pour the buttermilk. In a third bowl, place the breadcrumbs.

        Bread the Onion Rings: Dip each stuffed onion ring first in the flour mixture, shaking off the excess, then into the buttermilk, and finally coat them with breadcrumbs. Make sure they are coated well for a crispy finish.

          Heat the Oil: In a large skillet, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by adding a breadcrumb; if it sizzles and bubbles, it's ready.

            Fry the Onion Rings: Carefully place 3-4 onion rings into the hot oil (do not overcrowd the pan). Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
