8 oz cream cheese, softened

Prepare the Cheesecake Filling:

    - In a medium bowl, beat the softened cream cheese with an electric mixer until smooth.

      - Add in the granulated sugar, vanilla extract, and egg yolk. Mix until the filling is creamy and well combined.

        - Place the filling in the refrigerator to firm up while you prepare the cookie dough.

          Make the Cookie Dough:

            - Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
