Ingredients

12 large ripe strawberries

4 oz cream cheese, softened

¼ cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

¼ cup whipped cream (store-bought or homemade)

2 tablespoons crushed graham crackers

Fresh mint leaves for garnish (optional)

Instructions

Rinse the strawberries under cold water and gently pat them dry with a paper towel. Slice off the tops and hollow out a small portion of the inside using a small spoon or a melon baller, being careful not to pierce the sides.

In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and lemon juice. Using an electric mixer, beat the mixture on medium speed until it becomes smooth and creamy.

Gently fold in the whipped cream until well incorporated, ensuring the mixture remains light and airy.

Spoon or pipe the cheesecake mixture into the hollowed strawberries, filling them generously.

Sprinkle the tops of the filled strawberries with crushed graham crackers for that authentic cheesecake crust flavor.

Optional: Garnish with fresh mint leaves for a pop of color and added freshness.

Chill in the refrigerator for about 20-30 minutes before serving to allow the flavors to meld.

Prep Time: 15 min | Total Time: 45 min | Servings: 12 strawberries
