1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh herbs (such as chives, parsley, and thyme)

3/4 cup buttermilk

1 tablespoon honey (optional, for a touch of sweetness)

Freshly cracked pepper to taste

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Cut in Butter: Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

        Add Cheeses and Herbs: Stir in the shredded cheddar cheese, grated Parmesan cheese, and chopped fresh herbs until evenly distributed.
