Cauliflower Mashed Potatoes

1 medium head of cauliflower, cut into florets

2 medium potatoes, peeled and cubed

3 tablespoons unsalted butter

½ cup cream cheese (or Greek yogurt for a lighter option)

½ cup milk (or plant-based milk)

3 cloves garlic, minced

Salt and pepper to taste

2 tablespoons fresh chives or parsley, chopped (for garnish)

Instructions
 

In a large pot, bring salted water to a boil. Add the cubed potatoes and cauliflower florets. Cook for about 15 minutes or until both are tender when pierced with a fork.

    While the vegetables are cooking, melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté for 2-3 minutes until fragrant but not browned.

      Once the potatoes and cauliflower are done, drain them well and return them to the pot.

        Add the sautéed garlic and butter, cream cheese, and milk to the pot. Use a potato masher or an immersion blender to mash the mixture until smooth and creamy.

          Season with salt and pepper to taste. If the mixture is too thick, add more milk gradually until the desired consistency is achieved.

            Transfer the mashed cauliflower and potatoes to a serving bowl and sprinkle with fresh chives or parsley for a pop of color.
