Ingredients
  

1 medium head of cauliflower, grated or processed into rice-sized pieces

2 tablespoons sesame oil

2 cloves garlic, minced

1 small onion, finely chopped

1 cup mixed vegetables (carrots, peas, corn)

2 eggs, lightly beaten

3 green onions, chopped

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Begin by preparing the cauliflower. Cut the cauliflower into florets and either grate it using a box grater or pulse in a food processor until it resembles rice grains. Set aside.

    Heat the sesame oil in a large skillet or wok over medium heat. Add the minced garlic and chopped onion, stirring for about 1-2 minutes until fragrant and the onion becomes translucent.

      Increase the heat to medium-high and add the mixed vegetables to the skillet. Sauté for about 3-4 minutes until they start to soften.

        Push the vegetable mixture to one side of the skillet and add the beaten eggs to the empty side. Scramble the eggs until fully cooked, then mix them into the vegetables.

          Add the processed cauliflower rice to the skillet, combining everything well. Cook for about 5 minutes, stirring occasionally, until the cauliflower is tender but still al dente.

            Pour the soy sauce and optional oyster sauce over the mixture, stirring to ensure even distribution. Season with salt and pepper to taste.

              Remove from heat and stir in the chopped green onions for a fresh touch.

                Serve hot, garnished with fresh cilantro if desired.
