3/4 cup cocoa powder

1 cup coconut sugar (or brown sugar)

1/2 cup unsweetened applesauce

1/2 cup almond milk (or any plant-based milk)

1/4 cup vegetable oil (or melted coconut oil)

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1 cup finely grated carrots

1/2 cup vegan chocolate chips

Green colored coconut flakes (for decoration)

Orange vegan frosting (for the carrot tip)

Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper.

    In a large mixing bowl, combine the flour, cocoa powder, coconut sugar, baking powder, baking soda, and salt. Mix well to ensure everything is evenly distributed.

      In a separate bowl, whisk together the applesauce, almond milk, vegetable oil, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to over-mix.

          Fold in the grated carrots and vegan chocolate chips until they are evenly distributed throughout the batter.

            Pour the brownie batter into the prepared baking pan, spreading it evenly.

              Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).

                Once baked, remove from the oven and let the brownies cool completely in the pan on a wire rack.

                  While the brownies are cooling, prepare the decoration. Use the orange vegan frosting to create the shape and detail of a carrot on top of each brownie.

                    Once frosted, sprinkle the green colored coconut flakes at the top of the carrot shapes to give them a realistic green leafy look.
