4 large carrots, grated

1/2 cup raisins

1/4 cup chopped fresh parsley

1/4 cup sunflower seeds

1/4 cup Greek yogurt

2 tablespoons honey

1 tablespoon lemon juice

1 tablespoon olive oil

1/2 teaspoon cinnamon

Begin by peeling and grating the carrots using a box grater or food processor. Place them in a large mixing bowl.

    Add the raisins, chopped parsley, and sunflower seeds to the bowl with the grated carrots. Mix well to combine.

      In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, olive oil, and cinnamon until smooth.

        Pour the yogurt dressing over the carrot mixture and toss everything together until the carrots are well coated.
