1 lb ground beef (80/20 for juiciness)

2 large onions, thinly sliced

2 tbsp olive oil

2 tbsp unsalted butter

4 slices Swiss cheese

4 slices rye or sourdough bread

1 tbsp Worcestershire sauce

Salt and pepper to taste

1 tsp garlic powder

1 tsp dried thyme (optional)

Dijon mustard (for spreading)

Caramelize the Onions: In a skillet, heat the olive oil and butter over medium heat. Add the sliced onions, sprinkle with salt, and cook, stirring occasionally, for about 15-20 minutes, or until golden brown and caramelized. If they start to stick, add a splash of water to deglaze the pan. Stir in garlic powder and thyme, and cook for an additional minute. Remove from heat and set aside.

    Prepare the Patties: In a bowl, combine the ground beef, Worcestershire sauce, salt, and pepper. Mix gently and form into 4 equally sized patties, about ½ inch thick. Make a slight indentation in the center of each patty (this prevents puffing during cooking).

      Cook the Patties: In the same skillet used for the onions, cook the patties over medium-high heat for about 4-5 minutes on each side, or until they reach your desired doneness. In the last minute of cooking, place a slice of Swiss cheese on each patty and cover the skillet to melt the cheese.

        Assemble the Patty Melts: Spread Dijon mustard on one side of each slice of bread. On the non-mustard side, layer the caramelized onions, a cheeseburger patty, and then top with another slice of bread, mustard side down.

          Grill the Sandwiches: In the same skillet, carefully place the assembled sandwiches and cook over medium heat for about 3-4 minutes on each side or until the bread is golden brown and crispy. You can use a spatula to press down slightly for even toasting.
