4 large onions, thinly sliced

6 slices of bacon, chopped

2 tablespoons olive oil

1 teaspoon sugar

1 teaspoon thyme (fresh or dried)

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

Salt and pepper to taste

Optional: Chopped chives for garnish

In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Once cooked, remove the bacon with a slotted spoon and set aside on paper towels to drain excess fat.

    In the same skillet with the remaining bacon fat, add the thinly sliced onions. Cook on medium-low heat, stirring occasionally, for about 20 minutes, until the onions are soft and golden brown.

      Add the sugar and thyme to the onions, and continue to cook for an additional 5-10 minutes, stirring frequently, until the onions are deeply caramelized. Season with salt and pepper to taste.

        In a mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth and creamy.

          Stir in the caramelized onions and bacon, followed by the shredded cheddar cheese. Mix until all ingredients are evenly combined.

            Transfer the mixture to a baking dish. Optional: sprinkle extra cheddar cheese on top for a cheesy crust.

              Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until heated through and bubbly on the edges.
