12 oz cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls, halved

1 cup fresh basil leaves, torn

¼ cup balsamic glaze

2 tablespoons olive oil

1 clove garlic, minced

Salt and pepper to taste

Optional: crushed red pepper flakes for heat

Instructions
 

Cook the tortellini according to the package instructions until al dente. Once cooked, drain and rinse under cold water to cool.

    In a large mixing bowl, combine the cooled tortellini, halved cherry tomatoes, and mozzarella balls.

      In a small mixing bowl, whisk together the balsamic glaze, olive oil, minced garlic, salt, and pepper until well combined and smooth.

        Pour the dressing over the tortellini mixture and gently toss until all ingredients are well coated.

          Add the torn basil leaves to the salad and toss lightly to combine.

            Taste and adjust seasoning as desired, adding crushed red pepper flakes for a touch of heat if desired.

              Cover and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together.

                Before serving, give the salad another gentle toss and drizzle with a little more balsamic glaze if you like a sweeter finish.
