4 large Portobello mushrooms, stems removed

1 cup cherry tomatoes, halved

1 tablespoon balsamic vinegar

1 tablespoon olive oil

Salt and pepper to taste

1 cup fresh mozzarella balls (bocconcini), halved

½ cup fresh basil leaves, chopped

1 teaspoon garlic powder

½ teaspoon red pepper flakes (optional)

¼ cup grated Parmesan cheese

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a medium bowl, combine the cherry tomatoes, basil, balsamic vinegar, olive oil, salt, pepper, garlic powder, and red pepper flakes (if using). Toss until the tomatoes are well-coated.

      Place the Portobello mushrooms, gill side up, on the prepared baking sheet. Drizzle a little olive oil over the mushrooms and season with salt and pepper.

        Spoon the tomato and basil mixture evenly into each of the mushrooms, packing it in gently.

          Top each stuffed mushroom with halved mozzarella balls and sprinkle generously with grated Parmesan cheese.

            Transfer the baking sheet to the oven and bake for 20-25 minutes, or until the cheese is bubbly and golden, and the mushrooms are tender.

              Once cooked, remove the mushrooms from the oven and allow them to cool for a few minutes before serving.
