1 cup all-purpose flour

1/2 teaspoon salt

1/4 cup cold unsalted butter, diced

1/4 cup cold water

2 medium tomatoes, sliced

8 ounces fresh mozzarella cheese, sliced

1/4 cup fresh basil leaves

1 tablespoon balsamic glaze

Olive oil for drizzling

Freshly cracked black pepper to taste

Sea salt for seasoning

Instructions
 

In a mixing bowl, combine the flour and salt. Add the diced cold butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Gradually add cold water, one tablespoon at a time, mixing gently until the dough comes together. Shape it into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.

      Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

        On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer it to the prepared baking sheet.

          Layer the mozzarella slices in the center of the galette, leaving a 2-inch border. Top with sliced tomatoes and fresh basil leaves.

            Carefully fold the edges of the dough over the filling, pleating it as needed, and leaving the center exposed.

              Drizzle olive oil over the tomatoes and mozzarella, and sprinkle with freshly cracked black pepper and sea salt.

                Bake in the preheated oven for 30-35 minutes or until the crust is golden brown and the cheese is bubbly.

                  Once baked, drizzle with balsamic glaze before serving.
