Ingredients
  

2 cans refried beans

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 jalapeño pepper, finely chopped (seeds removed for less heat)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

½ cup vegetable broth (or water)

1 lime, juiced

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Crumbled queso fresco or shredded cheese, for topping (optional)

Instructions
 

In a medium saucepan, heat the olive oil over medium heat.

    Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.

      Stir in the minced garlic and chopped jalapeño, and cook for an additional 2 minutes until fragrant.

        Add the ground cumin, smoked paprika, and chili powder to the mixture, stirring well for about 30 seconds to toast the spices.

          Pour in the canned refried beans and vegetable broth, mixing everything together.

            Bring the mixture to a light simmer and cook for about 5-7 minutes, stirring occasionally to avoid sticking. Adjust the consistency by adding more broth or water if necessary.

              Remove from heat and stir in the lime juice. Season with salt and pepper to taste.

                Transfer the refried beans to a serving dish and top with crumbled queso fresco (if using) and chopped cilantro.
