1 pound Andouille sausage, sliced

1 cup long-grain white rice

1 medium onion, chopped

1 bell pepper (red or green), chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juice)

2 cups chicken broth

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

1 cup green onions, sliced (for garnish)

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet over medium heat, add the olive oil. Once hot, add the sliced Andouille sausage and sauté until browned and slightly crispy, about 5-6 minutes. Remove the sausage from the skillet and set aside.

    In the same skillet, add the chopped onion and bell pepper. Sauté for about 4-5 minutes until the vegetables are softened.

      Add the minced garlic and cook for another minute until fragrant.

        Stir in the rice, mixing it well with the vegetables to coat with oil. Cook for 2-3 minutes until the rice starts to turn a light golden color.

          Add the diced tomatoes (with juice), chicken broth, Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Stir to combine.

            Bring the mixture to a simmer, then cover the skillet with a lid, reduce the heat to low, and cook for about 20 minutes until the rice is tender and has absorbed most of the liquid.

              Once the rice is cooked, stir back in the browned sausage and heat through for an additional 2-3 minutes.

                Remove from heat and fluff the rice with a fork, then garnish with sliced green onions and chopped parsley before serving.
