4 large potatoes, peeled and diced

1 cup onion, chopped

1 cup celery, diced

1 cup bell pepper, chopped (preferably green)

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream or coconut cream for dairy-free

2 tablespoons Cajun seasoning (adjust to taste)

1 tablespoon olive oil

1 cup smoked sausage, sliced (optional; can substitute with vegan sausage)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, celery, and bell pepper. Sauté for about 5-7 minutes until the vegetables are softened.

    Add the minced garlic and sliced sausage (if using) to the pot, cooking for an additional 2-3 minutes until fragrant.

      Stir in the diced potatoes, vegetable broth, and Cajun seasoning. Bring to a boil, then reduce heat to simmer. Let it simmer for 20-25 minutes, or until potatoes are tender.

        Use a potato masher or an immersion blender to mash or blend a portion of the soup, depending on your desired texture. You can leave some chunks if you prefer a heartier soup.

          Stir in the heavy cream (or coconut cream). Allow the soup to simmer for another 5 minutes. Season with salt and pepper to taste.

            Serve hot, garnished with freshly chopped parsley for a burst of color and flavor.
