Ingredients

2 pork tenderloins (about 1 lb each)

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1/4 cup honey

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Marinade: In a mixing bowl, combine the Cajun seasoning, olive oil, honey, Dijon mustard, minced garlic, apple cider vinegar, smoked paprika, salt, and pepper. Whisk until well blended and smooth.

Marinate the Pork: Place the pork tenderloins in a large resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it is fully coated. Seal the bag or cover the dish with plastic wrap, then refrigerate for at least 2 hours, or overnight for better flavor.

Preheat Your Oven: When ready to cook, preheat your oven to 400°F (200°C).

Sear the Pork: In a large oven-safe skillet, heat a little olive oil over medium-high heat. Remove the pork from the marinade, letting excess drip off, and place it in the hot skillet. Sear the pork for about 3-4 minutes on each side until golden brown.

Bake in the Oven: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Baste occasionally with any leftover marinade.

Rest and Slice: Once done, remove the skillet from the oven, cover the pork with foil, and let it rest for 5-10 minutes. This helps the juices redistribute.

Serve: Slice the pork tenderloin into medallions, drizzle with any remaining pan juices, and garnish with fresh parsley. Serve with your favorite sides like roasted vegetables or garlic mashed potatoes.
