2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

8 oz fettuccine pasta

1 cup heavy cream

1 cup chicken broth

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken breasts with Cajun seasoning on both sides. Let them marinate for at least 15 minutes for the flavors to penetrate.

    Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

      Sear the Chicken: In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and sear for about 6-7 minutes on each side or until cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

        Sauté the Vegetables: In the same skillet, add chopped onion, sliced red and green bell peppers, and minced garlic. Sauté for about 5 minutes until the vegetables are tender but still vibrant.

          Make the Sauce: Pour in the chicken broth and heavy cream. Bring to a gentle simmer while stirring. Let it cook for another 3-4 minutes until slightly thickened.

            Combine: Add the cooked fettuccine and sliced chicken to the sauce, tossing everything together until well coated. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
