1 lb boneless, skinless chicken thighs

1 cup orzo pasta

1 tablespoon Cajun seasoning

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup cherry tomatoes, halved

2 cups chicken broth

1 cup creole-style diced tomatoes (canned)

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

1 cup fresh spinach

Fresh parsley, chopped for garnish

Grated Parmesan cheese (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken thighs with Cajun seasoning, ensuring they are evenly coated. Let it marinate for at least 30 minutes to enhance the flavor.

    Cook the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the marinated chicken thighs. Cook for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion, bell pepper, and garlic. Sauté until the onions become translucent (about 3-4 minutes).

        Add Orzo and Liquids: Stir in the orzo pasta, smoked paprika, salt, and black pepper. Next, add the chicken broth and canned diced tomatoes, stirring to combine.

          Cook the Orzo: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 10-15 minutes, or until the orzo absorbs most of the liquid and becomes tender, stirring occasionally.

            Combine: Once the orzo is cooked, slice the chicken thighs and add them back to the skillet along with the fresh spinach and cherry tomatoes. Stir until the spinach wilts and everything is heated through, about 2-3 minutes.

              Serve: Remove from heat and garnish with fresh parsley and grated Parmesan cheese if desired. Serve warm and enjoy your delicious Cajun Chicken Orzo!
