Ingredients

2 boneless, skinless chicken breasts, sliced into strips

1 cup smoked sausage, sliced (preferably Andouille)

2 tablespoons Cajun seasoning (store-bought or homemade)

3 tablespoons olive oil

3 cloves garlic, minced

1/2 onion, finely chopped

1 bell pepper, diced (any color)

1 cup heavy cream

1 cup grated Parmesan cheese

8 ounces fettuccine pasta

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Season the Chicken: In a mixing bowl, coat the chicken strips with Cajun seasoning. Make sure they are evenly coated for a robust flavor.

Cook Chicken and Sausage: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned chicken strips and cook for about 5-7 minutes until they are golden and cooked through. Remove and set aside. In the same skillet, add the sausage slices and cook for 3-4 minutes until browned. Remove and set aside with the chicken.

Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil, then add the onion, bell pepper, and minced garlic. Sauté for 4-5 minutes until the vegetables are soft and fragrant.

Create the Sauce: Lower the heat and pour in the heavy cream. Stir well and let it simmer for about 2-3 minutes until it slightly thickens.

Add Cheese: Gradually whisk in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Combine Everything: Return the chicken and sausage to the skillet with the cream sauce. Stir to combine and let it heat through for another 2 minutes. Season with salt and pepper to taste.

Combine with Pasta: Add the cooked fettuccine to the skillet and gently toss everything together until the pasta is well-coated with the sauce.
