Cajun Chicken and Broccoli Alfredo Pasta

2 boneless, skinless chicken breasts

2 teaspoons Cajun seasoning

Salt and pepper to taste

1 tablespoon olive oil

8 oz fettuccine pasta

2 cups broccoli florets

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Start by seasoning both sides of the chicken breasts with Cajun seasoning, salt, and pepper.

    Heat olive oil in a large skillet over medium heat. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and let rest for a few minutes before slicing.

      In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.

        Meanwhile, bring a pot of salted water to a boil and cook the fettuccine pasta according to package instructions. In the last 3 minutes of cooking, add the broccoli florets into the pot to blanch them. Drain the pasta and broccoli together.

          In the skillet with garlic, pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and mix until the sauce is smooth. Add red pepper flakes if you like some extra heat.

            Add the drained pasta and broccoli to the Alfredo sauce, tossing to coat everything evenly.

              Slice the cooked chicken and arrange it on top of the pasta.

                Garnish with freshly chopped parsley before serving.
